Simple Tuscan Chicken, Delicious and Easy

Let me tell you about a dinner that checked all the boxes—easy, flavorful, budget-friendly, toddler-approved, and husband-approved (with modifications, of course). It started with a recipe for Tuscan Chicken that I tweaked to fit my family’s preferences and pantry, and honestly, it turned out so good I had to share it with you.

Why I Chose Chicken Thighs

The original Tuscan Chicken recipe called for chicken breasts, but I opted for boneless skinless chicken thighs because:

1.5 lbs boneless skinless chicken thighs Salt and pepper to taste 1 tbsp olive oil 2 cloves garlic, minced 1/2 small onion, finely diced 1 tsp Italian seasoning 1/2 cup sun-dried tomatoes (packed in oil), drained and sliced 2 cups fresh spinach, finely chopped (I used a food processor) 3/4 cup heavy cream 1/2 cup grated Parmesan cheese Cooked bow tie pasta, for serving

Directions:

Season and sear the chicken: Season both sides of the chicken thighs with salt and pepper. In a large skillet, heat olive oil over medium heat. Sear chicken thighs for 4–5 minutes per side until golden and cooked through. Remove and set aside. Sauté aromatics: In the same skillet, add a little more oil if needed. Sauté garlic and onion until soft and fragrant, about 2–3 minutes. Add Italian seasoning and stir. Build the sauce: Add sun-dried tomatoes and chopped spinach. Cook until spinach is wilted and blended into the mix (about 2 minutes). Add the cream and cheese: Pour in heavy cream and bring to a low simmer. Stir in Parmesan and cook until sauce is slightly thickened, about 2–3 minutes. Combine everything: Return chicken to the skillet and spoon sauce over the top. Simmer another 2–3 minutes to let flavors meld. Serve: Spoon over cooked bow tie pasta and enjoy!
